Crock Pot Tuscan Chicken


Nothing is going to be as simple and easy as a good crock pot meal! Not only is it efficient it is absolutely delicious as well, you can taste the combination of richness of flavors due to the slow cooking process.


I swear we could smell the dinner and all of its delicious flavors from outside the house!! And nothing makes me happier than arriving home knowing dinner is ready to be served.


How crazy is that you can get a mouthwatering Tuscan Chicken by just adding all the ingredients in a crockpot and let it cook for 3 hours. It's magic I say!




When it comes to using a crock pot, you have to make sure you are adding flavor and spices, to secure a good bold flavor! I added sun-dried tomatoes, onion, caramelized garlic, fresh basil, dried thyme and sweet paprika.


I also made sure to add a lot of veggies to the mix, cherry tomatoes, mushrooms, and lots and lots of spinach!


CROCK POT TUSCAN CHICKEN


INGREDIENTS


2 chicken breasts, cut in half

4 cups spinach

1/2 cup mushrooms, sliced

1/2 cup cherry tomatoes, cut in half

1/2 cup sun-dried tomatoes

6 caramelized garlic cloves, minced

1 tbsp olive oil

3/4 cup veggie or chicken broth

1/4 cup fresh basil, chopped

1/4 cup grass-fed butter

1/4 cup almond milk

1 tsp thyme

1 tsp sweet paprika

Sea salt, to taste

Black pepper, to taste


INSTRUCTIONS

1. Using a crock pot/slow cooker, set in high, add all ingredients. let it cook for 1 hour.

2. Reduce to low and let it cook for 3 hours.

3. Accompany your Tuscan Chicken with brown rice, quinoa or caramelized potatoes.
