NEW! Summer Salad


We all need a good summer salad in our lives!!! It's really sad when you see a lonely tasteless salad, when there is no need..

You can make a good full of complex flavor salad!

Sharing with you all my newest creation!

SUMMER SALAD

INGREDIENTS

1 head of cauliflower, cut into florets

1 can 14 oz. chick pea can

1/4 cup extra virgin olive oil

1 tsp paprika

1/2 tbs chipotle chili powder

2 garlic cloves, minced

sea salt

black pepper

6 cups mixed greens

2 cucumbers, sliced

1/4 cup basil and dill, chopped

4 ounces feta or goat cheese

1-2 avocados, sliced

HONEY MUSTARD VINAIGRETTE

1/4 cup virgin olive oil

1 lemon, juice

2 tbs honey

1 tbs paprika

2 tbs apple cider vinegar

sea salt

DIRECTIONS

1. Preheat oven to 425F.

2. Start with the vinaigrette, so it has time to simmer. To make vinaigrette, combine all ingredients in a mason jar and shake well, until completely smooth.

3. On a large baking sheet, combine cauliflower, chick peas, olive oil, paprika, chipotle powder, garlic, sea salt and pepper. Toss and coat evenly. Roast for 20 minutes or until tender.

4. Meanwhile, in a large salad bowl, mix greens, cucumbers and herbs.

5. Toss cauliflower and chick peas in with the salad. Add a little vinaigrette and toss well. Top with avocado and feta or goat cheese.

Serve and enjoy!
