Sweet Potato and Chickpea Salad


You guys have been asking for more recipes, so here you go!!

One of my favorite winter salads, being still winter sometimes we don't crave as much cold raw salads. This salad gives you the perfect balance, you will be craving it all winter long!

SWEET POTATO AND CHICKPEA SALAD

Time: 50 minutes

Servings: 2

INGREDIENTS

SALAD

6 cups romaine lettuce

2 cups sweet potato, cut in cubes

1/4 purple onion, finely cut

1/2 avocado

CHICKPEAS

1 15 oz can chickpeas

1/2 tsp ground cumin

1/2 tsp paprika

1 tsp garlic powder

1 tsp onion powder

1/4 tsp coriander

1 tsp sea salt

1/2 tsp black peppers

1 tbs olive oil

DIRECTIONS

1. Preheat oven to 400 F.

2. Lightly spray a baking sheet with parchment paper on top or spray with a non-stick spray.

3. Rinse and dry chickpeas.

4. Add chickpeas to the baking sheet and roast them for 15 minutes.

5. Meanwhile, in a small bowl mix together all the spices: cumin, paprika, garlic and onion powder, coriander, sea salt and black pepper.

6. Once the 15 minutes have passed, add olive oil and mix well.

7. Stirring so its evenly coated, add spices and bake for another 15 minutes.

8. Meanwhile, prep your salad in a bowl add: lettuce, onion, avocado

9. Once chickpeas and sweet potatoes are done, let them cool a bit and add to your salad!

LIME MUSTARD DRESSING

INGREDIENTS

1 tbs Dijon Mustard

1 tbs balsamic vinegar

1/2 lime

1 tbs olive oil

1 tsp minced garlic

1/4 tsp sea salt

1/4 tsp black pepper

DIRECTIONS

Mix all ingredients well by one one and enjoy with your salad!
