My Poke Bowl Recipe!


Keeping it short and simple as I'm on vacation, but before I go on with my day, which includes trying out new places to eat ('m such a foodie) I want to pop on here with you because this recipe I made the other day is the bomb!

You can always add your favorite toppings and make it your own! This is such an important when cooking, play with spices and flavor and have fun!

AHI TUNA POKE BOWL

INGREDIENTS

1 pound sushi grade ahi tuna , cut into 3/4 -inch cubes

1/4 cup soy sauce

3 tbs lime juice

1 teaspoon rice vinegar

1 1/2 teaspoons sesame oil ,

3/4 teaspoon red pepper flakes

1/3 cup green onions , thinly sliced

1/2 teaspoon sesame seeds , plus more for garnish

2 cups brown rice or quinoa

2 cups salad greens

1/4 cups carrots, shredded

1/2 small avocado

INSTRUCTIONS

1. In a medium-sized bowl combine ahi tuna, soy sauce, rice vinegar, sesame oil, lime juice, red pepper flakes, green onions and sesame seeds.

2. Serve immediately or refrigerate covered for up to 2 hours before serving. Toss to recombine in the sauce before serving.

3. Add cooked rice, salad, poke and desired toppings to each bowl.

There you go, your very own Poke Bowl!

This recipe takes no more than 10 minutes and is perfect for a quick lunch prep on the go!
