My 2 Take On-The-Go Breakfasts- So Easy!!
When it comes to eating breakfast, from my own personal experience and experience with clients, having a breakfast it's the way to go!!
You can't deny it's amazing benefits:
More constant energy through out your day
Less overeating through out the day
Now, I know a lot of people, don't eat breakfast not because they don't want to but because of lack of time, right?
This can be simply solved, by taking 5 minutes a night before to prep your breakfasts for the next day, so can grab and go!
So, here you go, two easy-delicious- healthy breakfasts.
Veggies Egg Muffins
Olive oil or cooking spray
4 slices of bacon
1 cup cherry tomatoes
2 tablespoons green onions
Preheat oven to 350 degrees F. Spray 6 muffin cups with cooking spray or oil them with olive oil.
Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until halfway cooked, about 5 minutes. Cut bacon into small pieces.
Mix bacon, eggs, tomatoes, green onion, sea salt and black pepper together in a bowl. Pour mixture into the prepared muffin cups.
Bake in the preheated oven until each muffin is set in the middle, 15 to 20 minutes.
Serve with your favorite cup of fruit!
1/2 cup steel cut oats
2/3 cup unsweetened almond or coconut milk
1 tablespoon chia seeds
1/2 teaspoon vanilla extract
Pinch of salt
2 tablespoons honey or maple syrup
3 tablespoons fruit of choice
Whisk together all ingredients in a medium-sized mixing bowl. Spoon into a jar with a tight-fitting lid.
Close and refrigerate for at least 4 hours, but preferably overnight before eating.
Note: Add your favorite toppings in the morning
Both of these recipes take no more than 5 minutes or less!
