Mediterranean Bowl


Hey hey!!

Another thing you may not know about me--> I'm a huge fan and foodie when it comes to mediterranean food and diet! And Greece is in the top spots of my Where To Next on Traveling List.

This is also a quick dinner that you can make, and it's savory and delicious! You can pair with any leftover chicken, meatballs or fish that you might already have.

I'm sharing with you all the recipe of the three main components of this dish, Tzaziki Sauce the Cucumber and Tomato Salad and the Cauliflower rice.

Tzaziki Sauce

INGREDIENTS

1 cups plain Greek yogurt

1/2 cup seeded cucumber shredded or diced

1 Tbsp lemon juice

1 cloves garlic minced

1/2 Tbsp chopped fresh dill or dried dill

Salt and pepper to taste

INSTRUCTIONS

1.Sprinkle salt onto shredded or diced cucumber, then lay out on paper towel to draw out moisture.

2.Mix together yogurt, cucumber, dill, garlic, and lemon.

Cucumber and Tomato Salad

INGREDIENTS

1/2 cup sliced cucumber

1 tomato diced

1/4 cup sliced purple onion

1 Tbsp lemon juice

1 Tsp apple vinegar

1 cloves garlic minced

Salt and pepper to taste

INSTRUCTIONS 1. Add all ingredients into a bowl and mix well!

Cauliflower Rice

INGREDIENTS

3 cups cauliflower rice (store bought)

3 tablespoons olive oil

1 medium onion, finely diced

Kosher salt

2 tablespoons fresh parsley leaves, finely chopped

Juice of 1/2 lemon

INSTRUCTIONS

1. Heat the oil in a large skillet over medium-high heat, add the onions, and stir to coat.

2. Continue cooking, stirring frequently, until the onions are golden brown at the edges and have softened, about 8 minutes.

3.Add the cauliflower, and stir to combine.

4. Add 1 teaspoon sea salt, and continue to cook, stirring frequently, until the cauliflower has softened, 3 to 5 minutes.

5. Remove from the heat.

LASTLY COMBINE ALL PREPARED FOODS!

You can also can zucchini, bell peppers and other veggies :)
