Cinnamon Stuffed Dates (vegan option)
When it comes to keeping your diet as clean as possible but while indulging in something sweet, Stuffed Dates are your best bet!
These goodies are part of my Post Travel getting back on track Nutritional Plan, basically they are just baked dates stuffed with caramelized nuts and seeds.
Andd.. as simple as it sounds, it is also as simple to make!
My motto always in the kitchen and in life is to keep it Simple, Delicious and Healthy, to go with my pretty crazy schedule. I know this simple and delicious treat will go perfectly with your schedule as well!
(you need very few ingredients)
(your nuts and seeds finely chopped, like in the lower left corner)
With this treat it all comes down to the flavors your give to your mix, so get creative, use your favorites nuts and seeds, honey or maple syrup, nutmeg and so many more spices.
(I used a combination of coconut sugar and honey as a sweetener, you can do your own combination: agave syrup, maple syrup, coconut palm sugar or honey)
(depending on how much you like cinnamon, it will vary on the quantity you use, for the mix)
(mix your ingredients well, make sure to try it before stuffing dates so you can make any adjustments)
(remove pits from dates, or you can buy pitted dates at the grocery store instead)
(stuff your dates and drizzle with coconut palm sugar and cinnamon, this is optional)
Preparation Time: 10 minutes
Cooking Tim: 8-10 minutes
1/2 cup nuts and seeds of choice
1 tbs honey or maple or agave syrup to make it vegan
1 tbs coconut palm sugar
1 tbs chia seeds
1/2 tsp vanilla extract
1. Preheat oven at 350 F.
2.Mix all ingredients together, mix well.
3. Remove pits from dates.
4. Stuff dates.
5. Bake from 8-10 minutes, check that stuffing doesn't burn.
