I have the perfect salad for your Holiday dinner! Loaded with greens, blackberries and walnuts. Want to add some extra protein? This salad is delicious served with Baked Salmon or Grilled Shrimp.

BLACKBERRY MIXED GREEN SALAD
2 cups spinach
2 cups arugula
1/4 cup feta
1/4 cup walnuts, chopped
1 cup brown rice, cooked
1/2 cup blackberries
Blackberry Balsamic Dressing
1/4 cup blackberries
2 tbs olive oil
1 tbs balsamic vinegar
1/2 tbs honey
1. In a large bowl, mix: greens, walnuts, rice, blackberries.
2. For dressing: put blackberries, olive oil, balsamic vinegar and honey. Blend until smooth.
3. Drizzle salad with dressing and serve.
