We all love pizza! How about a Breakfast Pizza?? For some may sound delish and for some may look at this with suspicion: What?? Egg and Pizza??
Before you say no, please do try it no only because it's so delicious but it also so simple to make and quite healthy!
Besides we all need to change it out bit with our breakfasts. Right?
Now, to keep it healthy, and add more nutrients buy whole-wheat, gluten-free or sprouted-wheat pizza dough or if you want to make your own even better!
3 tbs pesto
1 tbs olive oil
1/2 cup chopped onion
2 cups fresh spinach
1 cup shredded fresh mozzarella cheese
1. Preheat oven to 400F.
2. Place the flat bread in the pizza pan.
3. Start cooking in a medium skillet over medium heat, olive oil, add onion and stir for 3-4 minutes. Add mushrooms and cook for another 2 minutes. Turn off heat,add spinach and cook for 1-2 minute.
4. Top flatbread with pesto sauce, vegetable mixture and sprinkle with mozzarella. Crack eggs on top and bake for 10 minutes or until eggs are nicely cooked.
