By popular demand, I'm sharing with you all the recipe for my Stuffed Sweet Potato!
I stuffed it this time with ground turkey, but feel free to stuff it with whatever you want: veggies, chicken or fajita.
This dish so perfect to meal prep for your busy days! And did you know that by eating Sweet Potato it will reduce your sugar cravings? The sugary taste of a sweet potato, gives your tastes buds just the enough sweetness your body is craving for.
Stuffed Sweet Potato
1 sweet potato, poke holes throughout
2 tablespoons olive oil or coconut oil
½ yellow onion, diced
½ pound ground turkey
2 tablespoons hot sauce
3 teaspoon garlic powder
3-4 cups fresh spinach
1 slice of bacon
salt and pepper, to taste
Greek Yogurt Sauce
1/4 cup Greek Yogurt
1/2 lemon juice
1 tablespoon olive oil
2 tablespoons vegan mayonaise or mayonnaise without added sugars.
1. Preheat oven to 425 degrees.Poke holes in sweet potato and wrap in foil. Place in oven and bake for 30-35 minutes. If you are in a hurry, put oven on Broil it will bake your sweet potato faster.
2. Start your turkey and bacon preparation, first cook your bacon in a pan, until crisp and remove. Use that same bacon grease for turkey preparation or use olive oil. Add the onions and cook until translucent, add ground turkey and break up with a wooden spoon.While the turkey is cooking, add garlic powder, salt and pepper. Finally, when turkey is pretty much done cooking, add spinach and cover to help the spinach steam, then mix with the meat.
3.Then, get your Greek Yogurt Sauce ready, whisk all ingredients, as easy as that.
4. Last, once the sweet potatoes are done cooking, cut open and mash insides up with a fork. Then add the turkey mixture and bacon to the inside. Followed by the Greek Yogurt Sauce.
