Healthy Zucchini Bread


As we are officially in Fall Season, I am craving more of the pumpkin and zucchini flavors and I know so do you. For the longest time I have been wanting to do a Zucchini bread and seeing that we are in zucchini season, can't think of a better time to bake a Loaf of Zucchini bread!

Don't think this is a salty bread, not all, it's actually quite sweet and more of a sweet tooth fix! It is also a perfect way to add more veggies into your kiddos diet, they will love this bread, they might look at it with suspicion having being a zucchini bread but they will realize it tastes quite delicious!

ZUCCHINI BREAD

Prep time: 10 minutes

Cook time:45 minutes

Total time: 55 minutes

Yield: 1 loaf

INGREDIENTS

2 eggs

2 cups of Zucchini

3 ripped bananas

1 cup nuts

1 tbsp grass fed butter or coconut oil

2 cup almond flour

1 tsp vanilla

1 tsp seas salt

1 cup coconut sugar

1 tsp baking soda

DIRECTIONS

1. Preheat oven to 475F, grease loaf pan or use parchment paper.

2. Mash ripped bananas, mix all liquid ingredients first, followed by the dry ingredients. Mix well!

3. Once all well combined pour mix into loaf pan.

4. Time may vary depending on over; insert toothpick to make sure bread is done.
