Tomato and Egg Muffins


Back to school morning rush?? Keep it simple, healthy and delicious. You might have to prep a bit ahead but well worth it.

Eating your breakfast in the morning really sets you up good for a more energized, happier mood, healthy day. You can take this dish on the go or eat at the office, very easy to pack and go.

The way to maintain a healthy lifestyle is to find practical easy ways that work for you! These Egg Muffins are perfect for a on the go lifestyle.

Morning Tomato and Egg Muffins

Ingredients

Servings 6

Olive oil or cooking spray

4 slices of bacon

8 eggs

1 cup cherry tomatoes

2 tablespoons green onions

sea salt

black pepper

Directions

  1. Preheat oven to 350 degrees F. Spray 6 muffin cups with cooking spray or oil them with olive oil.

  2. Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until halfway cooked, about 5 minutes. Cut bacon into small pieces.

  3. Mix bacon, eggs, tomatoes, green onion, sea salt and black pepper together in a bowl. Pour mixture into the prepared muffin cups.

  4. Bake in the preheated oven until each muffin is set in the middle, 15 to 20 minutes.

Serve with your favorite cup of fruit!
