Honey Chicken Quinoa Bowl


A bowl of super super foods! The perfect healthy combination of all the essentials foods your body needs to stay healthy and energized.

This is a mix of my favorite combination, get creative, don't be afraid and make it your own. You can always substitute the chicken for shrimp, the black beans for chick peas, and the lettuce for arugula!

Honey Chicken Quinoa Bowl

INGREDIENTS

1 tablespoon olive oil

1 tablespoon honey

½ teaspoon ground cumin

½ teaspoon garlic powder

1 pound boneless, skinless chicken breast

Sea salt, to taste

2 cups cooked quinoa

2 cups shredded romaine lettuce

1 cup canned black beans, rinsed

1 avocado, diced

¼ cup prepared pico de gallo or other salsa

¼ cup queso fresco

DIRECTIONS

1. Preheat oven on broiler. Combine olive oil, honey, garlic powder and cumin in a small bowl. Oil the baking sheet and season chicken with sea salt and pepper to taste. Broil the chicken for 8 minutes. Turn, brush with the honey glaze and continue for 9 minutes more under the broiler. Once chicken is cooked chop into bite-size pieces.

2. Assemble each burrito bowl with ½ cup quinoa, ½ cup chicken, ½ cup lettuce, ¼ cup beans, ¼ avocado, 1 tablespoon pico de gallo (or other salsa) and 1 tablespoon cheese.

Serve with a lime wedge and drizzle with olive oil.
