Balsamic Turkey Quesadillas


Who knew quesadillas could be healthy!

This recipe works great also as an appetizer or a mid day snack. You use any healthy version tortilla that you want, yellow corn tortillas, cactus made tortilla, gluten-free or whole-wheat tortillas.

BALSAMIC TURKEY QUESADILLAS

INGREDIENTS

SERVINGS 4

1/2 red onion, chopped

¼ cup balsamic vinegar

2 tablespoons lime juice

4 10-inch whole-wheat tortillas

1 cup shredded Cheddar cheese

8 slices smoked deli turkey

sea salt, to taste

DIRECTIONS

1. Combine chopped onion, balsamic vinegar, lime juice and sea salt to taste, in a bowl. Let marinate for 5 minutes. Drain, save the vinegar for salad dressing.

2. Warm 2 tortillas or 1 by 1 in a nonstick skillet over. Working on one half of each tortilla, sprinkle one-fourth of the cheese, cover with 2 slices of turkey and top with one-fourth of the onion. Fold the tortillas in half, flatten gently with a spatula and cook until cheese starts to melt and flip the second side is golden.

Serve with a side salad.
