Avocado Cilantro Pesto Pizza
Let's be honest Pizza Night is for you to relax and for an uncomplicated dinner! Let me give you just that, a healthy easy Avocado & Cilantro Pesto Pizza + Skinny Margarita. My motto is to keep it realistic, practical and healthy, as moms with busy lives the last thing we want to do is to slave ourselves in the kitchen after a long day at work and taking care of the kiddos. Before anything else, your mental sanity is first, that is why I'm adding the recipe of a delicious Skinny Citrus Frozen Margarita (mommy juice), that I prepared for a little party I had in celebration of 5 de Mayo. For the Pizza Crust, I'm giving you two options, a Paleo Pizza Crust (last recipe below) if you want to prepare it from scratch or the store bought Flat Bread I use is from Angelic Bakehouse flatbread , if you can't find this brand, buy the healthiest version you may find at your nearest WholeFoods or Sprouts. Avocado & Cilantro Pesto Pizza Serves: 8 Active Time: 10 minutes Total Time: 20 minutes Ingredients
1 Angelic Bakehouse Flatbread 3 tablespoons store-bought Alfredo Sauce 2 tablespoons chopped Cilantro 2 tablespoons grated Parmesan 1/2 cup Mozzarella Cheese 1/4 cup Oaxaca Cheese 1 pinch red chili flakes 2 tablespoons scallions Salt Pepper Olive Oil 1/4 cup of chopped Cilantro to garnish 1 small avocado Directions
1. Preheat oven at 350 F. 2. Prepare faltbread, spoon Alfredo sauce and pesto in the center of the pizza and spread to edges. 3. Add parmesan, mozzarella and Oaxaca cheese, chili flakes, cilantro and scallions. 4. Bake for 10-12 minutes or until the edged are golden. 5. Remove pizza from oven. Add sliced avocados and season with salt, pepper, drizzle olive oil and chopped cilantro to garnish.
If you want to make your Pizza Crust from scratch... Paleo Crust Ingredients
2 cups blanched almond flour 3 tablespoons grassfed butter or palm shortening 1 tablespoon chopped rosemary ¼ teaspoon sea salt 1 teaspoon olive oil 2 tablespoons cold water Directions 1. Preheat an over to 350 degrees F. 2. Combine all of the crust ingredients except the water in a food processor and process until a ball of dough forms. With the machine running, add in 1 tablespoon of water at a time. You may not need 2 tablespoons depending on what type of almond flour you use, but I generally use all of it. Once the dough forms a dense ball, you can stop adding the water. 3. Place the dough on a sheet of parchment paper, then top with another piece of parchment. Roll the dough out to a 1/8 – 1/4 thickness. Carefully slide the piece of parchment paper onto a baking sheet. 4. Bake for 12 minutes, then remove the crust from the oven and increase the temperature to 375 degrees F.

Skinny Citrus Frozen Margarita
1 teaspoon Agave nectar or Honey 3 tablespoons Lime juice, freshly squeezed 1 1/2 tablespoons Orange juice, freshly squeezed Ice 1 1/2 oz Don Julio Blanco Tequila
1. In a blender combine all ingredients. 2. Add Ice, add more ice if needed until you have the consistency desired.
