Greek Pasta


If you follow me on my INSTA STORY @amandaccaballero you know I did this recipe just last night, I had plans to post another recipe but this recipe is soooo good that it made the cut before any other recipe. The recipe has the word “pasta” but it really is not pasta, one of the essential things about living a long healthy lifestyle is the ability to find healthy substitutes, hands down the is one my top 3 tips on how to live a long healthy lifestyle! That is why doing diets never last long, would you really go through out life without eating pasta, bread etc.??? Thought so! Now the key is finding that brand that is healthy and that you absolutely love. For this recipe I randomly found a delicious very healthy chickpea pasta from the brand Eat Banza this pasta is amazing, it has very few ingredients which is a good indication. I mixed this pasta with some Zucchini Spirals to add more nutrition value, the more the veggies the better! This recipe not only made the cute because is so delicious but also because it's a great recipe to make for a beautiful Summer day!

GREEK “PASTA” SALAD Dressing

Ingredients

3 cloves garlic 2 tbs oregano 1/3 cup olive oil 1/4 cup apple vinegar 1 tsp sea salt 1 tsp pepper Instructions 1.Dice garlic cloves. 2. Add garlic and the of the ingredients in a mason jar, shake well and let sit at room temperature for flavors to blend. “Pasta” Salad Ingredients 3 cups chick pea pasta or another healthy substitute (you can substitute for zucchini spirals) 2 cups zucchini spirals ½ cup artichokes ¼ cup basil, fresh leaves ¼ cup red onion ½ cup Kalamata olives ½ cucumber ½ cup cherry tomatoes ½ cup feta cheese Instructions 1. Boil pasta with sea salt and onions. 2. Sauté zucchini spirals with olive oil, sea salt, and garlic. 3. Add the cooked pasta, sautéed zucchini spirals, olives, artichokes, basil, onions, cucumbers, cherry tomatoes and half of the feta cheese to a large bowl. 4. Pour the dressing over the pasta salad and toss gently to mix. Taste for seasoning add more sea salt and pepper if needed. Add the rest of the feta cheese to top of the pasta and some more fresh basil. This is as easy as it sounds, enjoy! Thanks for reading and don’t forget to share this recipe, I truly appreciate it.
